A taste for art, and the art of taste
Proposing a type of cuisine that is like a window open onto the world, doubling as a space presenting contemporary art, William Ledeuil’s unclassifiable first restaurant premiered in 2001. It received its first star from the Michelin guide in 2008 and was granted the excellent grade of 16.5 by the Gault&Millau reference guide.
The urban and arty atmosphere surrounding the guests comes from the imagination of William Ledeuil’s friend Daniel Humair, a painter and jazzman. The pared-down lines of the space and of the furniture created by the designer Léopold Gest provide the perfect setting enhancing Daniel Humair’s and Tony Soulié’s paintings.
Present everywhere, art wasn’t left out of the menu either. Each plate stages a composition of shapes and colors that is always a feast for the eyes.
The guests also enjoy the flurry of activity playing out in the kitchen, where the Chef and his cosmopolitan crew concoct – live – inventive and healthy delicacies whose preparation demonstrates great mastery. Tarama soup seasoned with mango and curcuma; Burgundy snails laced with sake and artichoke in a Thai coconut lemongrass broth; wasabi-white chocolate ice-cream, praline, coffee, whisky … are but a few of the variations on William Ledeuil’s signature dishes building true culinary bridges between France and Asia.
